Mashed Oriental Potato, Braised Endive, Porterhouse Steak with Sauteed Onions and Mushrooms



The oriental potato is amazing!  It has a dark purple skin with a creamy white inside. They can be found next to the sweet potato. It has a chestnut flavor and you don't have to do much to it at all, just peel, boil, mash and add a tiny bit almond milk, pinch of sea salt and pepper and it's delicious

To make the endive, cut them in half and saute with a little olive oil, top down for 2 minutes, flip and cook for 2 more then drizzle with balsamic vinegar and flip so the flat side is down again for anther few minutes till tender.






Ground Turkey over Salsa and Sala

Saute 1 large onion until translucent, add 1 package ground turkey and continue to cook, add 1 tbs chili powder, 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp cumin and 3 tbs tomato puree, simmer for 10 minutes so the flavors melt together.

For the Salad, use a big bowl so you can easily mix everything together. Combine 1 romaine lettuce, 1/2 green pepper and 1/4 cucumber. Mix in 1/2 cup salsa and coat well. Plate salad and garnish with pineapple and avocado then placed a nice scoop of the ground turkey in the middle.
